Pascal Le Seac’H was born in Toulouse, France and has been a professional chef for more than 20 years. In France, Pascal worked in the world renowned two-star Michelin restaurant Le Chantecler in the Negresco Hotel in Nice and other restaurants. Pascal was also a member of the original opening team at famed New York City restaurant Daniel, and has worked at Park Bistro, Balthazar, and the Russian Tea Room. Pascal was executive chef at Pastis in New York City’s Meatpacking District for 10 years, and is the executive chef at rooftop restaurant, Gallow Green, in the Chelsea-based McKittrick Hotel, home of the immersive theater experience, Sleep No More. Pascal’s specialties include traditional and modern French dishes, American classics, vegetarian and vegan adaptations of popular recipes, and the cuisine of Vietnam, in honor of his Vietnamese grandmother.
